$20

with John Reilly

Calendar Apr 5, 2023 at 2 pm, runs for 8 weeks

The inspiration for the course is a cookbook entitled The Forager Chef's Book of Flora by Alan Bergio. We will meet in my kitchen with foraging outings as needed. The recipes include plants we usually don't think of as edible, from dandelion greens to goldenrod and hosta shoots to milkweed pods. Actual foraging will have to wait until things start ot grow. Until then, we will explore recipes and cooking techniques from around the world, ranging from the secret of creamy risotto, to homemade paneer, naan, and Chinese dumplings. Cooks and wannabes of any skill level are welcome. If you are an expert, come and share your secrets. We will not forage for mushrooms unless someone with real expertise in identifying mushrooms joins the class. Class ends with a chance to enjoy the fruits of our labor with a complete meal.
